A meal that asks something back.
Mugaritz’s 2026 season treats familiar assumptions as material to work with. Its appeal is not the promise of a universally pleasing dinner.
Published 21 October 2026 · WHV · Public-source editorial note
A restaurant can offer comfort through repetition, or it can ask you to reconsider what you expect from a meal. Mugaritz, near San Sebastián, works deliberately with the second possibility. Its 2026 season examines common ground: familiar ideas and conventions that become more interesting when they are questioned rather than automatically shared.
Pleasure is not the only brief
The restaurant announced the season for 1 May to 25 October 2026, following its research and development period. Collaborations beyond conventional cooking are part of that approach. This is not a claim that an unusual presentation necessarily tastes better. It is a different brief, in which texture, sequence, expectation and conversation can be as important as immediate recognisability.
That makes Mugaritz a useful edge case for WHV. An experience cannot be stored like a bottle or maintained like a chair, yet it can leave behind a changed way of seeing. The value depends on the person and the encounter. A guest seeking a comforting repertoire may reasonably prefer another restaurant, and the reputation of an experimental kitchen does not invalidate that preference.
Choose the encounter knowingly
Read the restaurant’s practical guidance and discuss dietary requirements before making a reservation. As of 21 October, the announced 2026 season is approaching its end, and no remaining table is implied here. For a later visit, wait for confirmed dates rather than carrying this season forward. The archival entrance photograph shows the place, not the current menu. Choose it for curiosity about the proposition, not because an expensive dinner must automatically be an important one.
