Thirty years is not a birthday.

Bodegas Tradición’s Amontillado VORS carries the effects of two kinds of ageing. Understanding their sequence is more revealing than simply admiring a large number on a label.

A wine can be old without age explaining very much. Tradición’s Amontillado becomes more interesting when its years are divided into two different lives. First comes time beneath flor, the layer of yeast associated with biological ageing in Jerez. Later, the wine develops through prolonged contact with air.

Two different relationships with air

The producer describes roughly ten years in the first stage and more than twenty in the second, with an average age of thirty-two years. Made from Palomino Fino, it is a dry sherry, not a sweet wine merely because its colour and age suggest richness. The sequence of processes matters as much as the duration.

VORS makes the language more exact. The regulatory council certifies released batches with an average age above thirty years, not every individual drop with the same birthday. Solera ageing maintains continuity through managed blending. The retained value is therefore a body of cellar material and judgement that cannot be recreated simply by printing a historical date on a new label.

An average is not a birthday

Explore it through a small tasting alongside a younger biologically aged sherry, ideally with someone able to explain the contrast. Confirm the exact bottling and storage history when buying. A bodega visit offers another route into the process. The courtyard photograph identifies the producer’s setting, not a specific cask or bottle. This is a case for understanding and enjoyment, not for expecting a return from keeping the wine unopened.
