DISCOVERY / Contemporary Sake & Assemblage
A sake composed from differences.
Released in October 2026, IWA 5 Assemblage 7 treats different sake components as a palette. The number identifies an edition of a continuing composition, not seven years of age.

The small number on the bottle is worth reading carefully. IWA 5 Assemblage 7, released on 1 October 2026, is not a seven-year-old sake. The number identifies a new assemblage in a continuing sequence. That distinction points towards the project’s real subject: the deliberate composition of different sake components.
Seven is not an age statement
Founded by Richard Geoffroy and made at Shiraiwa in Toyama, IWA brings together choices in rice, yeast, fermentation starters and maturation. The components are not treated simply as variations to eliminate before reaching one standard recipe. They supply possibilities for the final blend. The release is therefore an opportunity to investigate a way of making sake, not merely to chase the latest numbered bottle.
The interesting connection with other drinks lies in method rather than borrowed prestige. A blender needs both differences and an intention for bringing them together. Keeping those possibilities available involves work before the final decision: producing, assessing and caring for material that may play different roles. The finished bottle contains the result, while the number alone cannot explain whether a particular drinker will prefer it.
Difference is material for the blender
Ask a specialist retailer about the exact assemblage, storage and serving guidance, or seek a considered tasting rather than buying on the strength of an edition sequence. Compare only what can actually be tasted and identified. This is contemporary craft worth following as it develops. Its relevance comes from the relationship between production knowledge and sensory experience, not a presumption that each successive release is better or financially more valuable.
