DISCOVERY / Vermouth & Botanical Composition
The ingredient that changes the drink.
Carpano Antica Formula is a reminder that vermouth is not a neutral supporting act. A distinct botanical composition can change the balance of an entire drink.
Published 28 October 2026 · WHV · Public-source editorial note
A cocktail recipe may say sweet vermouth as though the choice were merely a colour. Antica Formula makes that shorthand worth questioning. Its pronounced identity can change the balance of the drink around it. Knowing which vermouth you are using is a small piece of knowledge with a surprisingly large practical effect.
The supporting ingredient has a voice
Carpano describes white wines from Italian regions including Romagna, Puglia and Sicily as the base, with botanical ingredients extracted by different hot and cold processes before blending and further settling. Vanilla is a defining part of the producer’s account. Difford’s independent 2024 tasting also identifies vanilla alongside dried-fruit and spice notes. These are descriptions of a particular style, not qualities WHV has independently tasted.
What holds value is an identifiable composition that can be learned through use. Compare a modest amount with another sweet vermouth, if you drink alcohol, and notice what changes in the same recipe. More intensity is not automatically better. A confident choice may mean using this expression for one drink and choosing something lighter for another. Connoisseurship can consist of understanding a supporting ingredient rather than acquiring a rarer bottle.
Choose for the drink you want to make
The date 1786 refers to Carpano’s historical origin, not the age of the liquid in a modern bottle. Antica Formula is not automatically a cellaring proposition. Buy a format suited to your use and follow current storage advice after opening. An attractive old-style label and numbered packaging should not distract from freshness, the intended occasion or the difference between cultural history and investment value.
